西芹炒雞柳 (Stir-fry Chicken with Celery)



家常小菜中一定少不了西芹炒雞柳, 西芹含高纖維又可降血壓, 多吃對身體有益; 吃西芹有人愛吃脆身的, 亦有人喜歡稔身的質感, 自家煮當然可以自由發揮!



食材 (Ingredients)
雞腿肉 150克 (Boneless Chicken Leg Meat 150g)
西芹 4條 (4 Celery)
蒜蓉 4瓣 (4 Cloves Garlic, chopped)
海鹽 適量 (Sea Salt)
白糖 適量 (Sugar)
紹興酒 1茶匙 (Shaoxing rice wine 1 teaspoon)

雞肉醃料 (Chicken Marinade)
白糖 0.5茶匙 (Sugar 0.5 teaspoon)
雞粉 0.5茶匙 (Chicken Power 0.5 teaspoon)
生抽 1茶匙 (Soy Sauce 1 teaspoon)
紹興酒 1茶匙 (Shaoxing rice wine 1 teaspoon)
胡椒粉 少許 (White Pepper Flake)
生粉 0.5茶匙 (Cornstarch 0.5 teaspoon)
麻油 1茶匙 (Sesame Oil 1 teaspoon)

調味料 (Seasonings)
白糖 0.5茶匙 (Sugar 0.5 teaspoon)
蠔油 1茶匙 (Oyster Oil 1 teaspoon)
清水 2湯匙 (Water 2 tablespoons)

步驟 (Steps)
1 雞腿肉洗淨, 去雞皮及切成粗條 

Rinse chicken leg meat, remove chicken skin and cut into pieces


2 用雞肉醃料醃雞腿肉約2小時 
Marinate the chicken with Chicken Marinade for 2 hours


3 西芹洗凈, 瀝乾水份, 撕去表面較粗的纖維; 斜切粗條; 蒜剁成蓉, 備用 
Rinse celery, drain it well, peel and dice the celery, set aside


4 燒熱油鑊, 下醃好的雞腿肉炒至8-9成熟, 盛起備用 
Heat the pan with oil, add the marinated chicken and stir-fry till almost done, drain and set aside


5 於同一個鑊內再下油燒熱, 爆香蒜蓉後下西芹, 加入適量海鹽和白糖炒勻, 澆少許紹興酒兜勻 Pour some oil in the same pan and heat, saute the garlic until fragrant. Add celery with some sea salt and sugar and mix it well, pour Shaoxing rice wine and stir-fry the celery until fragrant

6 加入雞腿肉炒勻, 下調味料, 把西芹煮至軟身及雞腿肉熟透 

Add back the chicken and stir-fry, pour the seasonings and mix it. Cook it through until the sauce thicken


7 上碟, 即成西芹炒雞柳, 趁熱食 
Dish it up and serve hot
